La r\u00e9frig\u00e9ration et la fermeture des barquettes en r-PET sont des \u00e9l\u00e9ments fondamentaux pour la dur\u00e9e de conservation des fraises : la barquette thermoscell\u00e9 est plus efficace que celle avec couvercle en termes de r\u00e9duction du poids des fruits.<\/h2>\n<p>BOLOGNA (2 mai 2013) &#8211; La prolongement de la dur\u00e9e de vie des fraises sur \u00e9tag\u00e8re et leur bonne conservation passent par l&#8217;utilisation d&#8217;environnements r\u00e9frig\u00e9r\u00e9s, mais pas seulement. La fermeture de l&#8217;emballage joue un r\u00f4le majeur, et la barquette thermoscell\u00e9 est plus efficace que celle avec couvercle en termes de r\u00e9duction de la perte de poids journali\u00e8re.<\/p>\n<p>Telles sont les conclusions de la recherche effectu\u00e9e par ILIP parmi les principales entreprises europ\u00e9ennes sur la production d&#8217;emballages alimentaires en plastique thermoform\u00e9s, et men\u00e9e par le D\u00e9partement des Sciences Agraires de l&#8217;Universit\u00e9 de Bologne en collaboration avec la soci\u00e9t\u00e9 exp\u00e9rimentale Martorano 5 de Cesena. L&#8217;analyse, men\u00e9e sur un \u00e9chantillon de fraises remontantes Monterey, a \u00e9valu\u00e9 l&#8217;effet de trois facteurs sur la dur\u00e9e de conservation et sur la qualit\u00e9 des fruits : type d&#8217;emballage, buvard et temp\u00e9rature de stockage.<\/p>\n<p>Les trois types d&#8217;emballages \u00e9tudi\u00e9s sont les barquettes en r-PET ILIP B22PET58 avec et sans couvercle et ILIP B40PET85 thermosoud\u00e9s avec film sup\u00e9rieur en PET non-perfor\u00e9. Une fois emball\u00e9es dans les trois types d&#8217;emballage, les fraises, apr\u00e8s deux jours pass\u00e9s dans une chambre froide ventil\u00e9e, ont \u00e9t\u00e9 divis\u00e9es en deux groupes, respectivement stock\u00e9s dans la chambre froide pendant 7 jours \u00e0 4\u00b0C (plus 2 jours \u00e0 23\u00b0C) et \u00e0 temp\u00e9rature ambiante (23\u00b0C) pendant 2 jours.<\/p>\n<p>Tant avant qu&#8217;apr\u00e8s le conditionnement et la p\u00e9riode de conservation, des mesures ont \u00e9t\u00e9 relev\u00e9es sur la fermet\u00e9 de la chair, le degr\u00e9 Brix, l&#8217;acidit\u00e9 du jus, la couleur et la r\u00e9duction du poids. Les r\u00e9sultats ont montr\u00e9 que tant la r\u00e9frig\u00e9ration que le type de conditionnement de la barquette sont essentiels pour prolonger la qualit\u00e9 des fruits, limiter la d\u00e9shydratation et r\u00e9duire l&#8217;incidence de la pourriture.<\/p>\n<p>Parmi les syst\u00e8mes d&#8217;emballage, la barquette thermoscell\u00e9e s&#8217;est r\u00e9v\u00e9l\u00e9e plus efficace que celle avec couvercle quant \u00e0 maintenir le poids original, avec une perte de 1,4 gr. par jour contre 3,6 gr. pour la variante \u00e0 couvercle, dans les essais avec r\u00e9frig\u00e9ration et buvard absorbant. La version thermoscell\u00e9 a pr\u00e9sent\u00e9 des performances l\u00e9g\u00e8rement meilleures m\u00eame en termes de r\u00e9duction du ramollissement et de la pourriture des fraises. La recherche a \u00e9galement compar\u00e9 le coussin \u00e0 bulles avec le buvard, sans noter de diff\u00e9rences significatives, probablement parce-que les barquettes ont subi de faibles contraintes m\u00e9caniques.<\/p>\n<p>\u00ab Cette recherche s&#8217;ins\u00e8re dans la poursuite de la coop\u00e9ration avec l&#8217;Universit\u00e9 de Bologne, laquelle a d\u00e9j\u00e0 fourni, l&#8217;ann\u00e9e derni\u00e8re, des informations tr\u00e8s utiles sur la pr\u00e9servation du raisin &#8211; d\u00e9clare Roberto Zanichelli, Directeur marketing de ILIP &#8211; il s&#8217;agit d&#8217;une autre contribution concr\u00e8te de la part de ILIP vers une majeure conscience de l&#8217;interaction entre l&#8217;emballage et les produits emball\u00e9s, \u00e9galement destin\u00e9e \u00e0 la r\u00e9duction des gaspillages alimentaires, un probl\u00e8me qui comporte un impact environnemental \u00e9lev\u00e9 et o\u00f9 l&#8217;emballage joue un r\u00f4le crucial \u00bb.<\/p>\n<p>Dans le cadre de cet engagement, ILIP a adh\u00e9r\u00e9 \u00e0 Save Food, initiative parrain\u00e9e par la FAO avec Interpack et Messe D\u00fcsseldorf visant \u00e0 r\u00e9duire les gaspillages alimentaires.<\/p>\n<p>Le document d\u00e9taill\u00e9 relatif \u00e0 la recherche sur l&#8217;\u00e9valuation de l&#8217;effet des diff\u00e9rents types d&#8217;emballage sur la dur\u00e9e de conservation et la qualit\u00e9 des fraises enti\u00e8res est disponible au format pdf en envoyant une demande \u00e0 l&#8217;adresse suivante : marketing@ilip.it.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>L&#8217;engagement de la soci\u00e9t\u00e9 de Bologne se poursuit avec une majeure conscience du r\u00f4le de l&#8217;emballage dans la r\u00e9duction des gaspillages alimentaires.
